How to change language selector text

OK, I understand. I don't think there is a way out of the box for that, but you can add a little Javascript at the end of the skin file(s) that replaces the texts based on the values, e.g.:

$(document).ready(function() {
   $("#dnn_LANGUAGE1_selectCulture option[value='en-US']").text("ENG");
   $("#dnn_LANGUAGE1_selectCulture option[value='fr-FR']").text("FRA");
   // etc.
});
